Ingredients 

  • 2 Bananas ripe and mashed
  • ¼ cup Coconut oil melted
  • ½ cup Brown sugar
  • 1 teaspoon Vanilla extract
  • 1 cup All-purpose flour
  • ½ teaspoon Baking soda
  • ¼ teaspoon Salt
  • ½ cup Vegan chocolate chips

Instructions 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the mashed bananas, melted coconut oil, brown sugar, and vanilla extract.
  3. Add the flour, baking soda, and salt to the wet ingredients and mix until just combined.
  4. Fold in the vegan chocolate chips.
  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are golden brown.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
