Vegan Pasta with Miso Cashew Sauce

Main Ingredients
- 200 g Pasta any type
- 1 cup Cashews soaked in water for 2 hours
- 2 tablespoon Miso Paste
- 1 tablespoon Soy Sauce
- 1 tablespoon Lemon Juice freshly squeezed
- 2 cloves Garlic
- 1 cup Water or as needed
- 2 tablespoon Nutritional Yeast
- to taste Salt and Pepper
1. Cook the pasta according to package instructions. Drain and set aside.
2. In a blender, combine soaked cashews, miso paste, soy sauce, lemon juice, garlic, water, and nutritional yeast. Blend until smooth.
3. In a pan, heat the sauce over medium heat until warm. Add salt and pepper to taste.
4. Toss the cooked pasta with the sauce. Serve immediately.
