Ingredients 

Main Ingredients

  • 4 large potatoes, diced
  • 1 package soy chorizo
  • 8 small corn tortillas
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional)
  • Lime wedges (optional)

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced potatoes and cook until tender, about 10-15 minutes.
  3. Add diced onion and garlic, cook until fragrant.
  4. Add soy chorizo and cook for another 5-7 minutes.
  5. Warm tortillas in another skillet or microwave.
  6. Fill tortillas with potato and chorizo mixture.
  7. Top with fresh cilantro and a squeeze of lime if desired.
