Instructions
Heat olive oil in a skillet over medium heat.
Add diced potatoes and cook until tender, about 10-15 minutes.
Add diced onion and garlic, cook until fragrant.
Add soy chorizo and cook for another 5-7 minutes.
Warm tortillas in another skillet or microwave.
Fill tortillas with potato and chorizo mixture.
Top with fresh cilantro and a squeeze of lime if desired.
