Vegan Pumpkin Chili Recipe
A hearty and delicious vegan chili made with pumpkin and a variety of beans.

Main Ingredients
- 1 tablespoon Olive Oil
- 1 Onion, diced
- 2 cloves Garlic, minced
- 1 cup Pumpkin Puree
- 1 can Diced Tomatoes
- 1 can Black Beans, drained and rinsed
- 1 can Kidney Beans, drained and rinsed
- 1 cup Vegetable Broth
- 1 tablespoon Chili Powder
- 1 teaspoon Ground Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
Heat olive oil in a large pot over medium heat.
Add diced onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Stir in pumpkin puree, diced tomatoes, black beans, kidney beans, and vegetable broth.
Add chili powder, ground cumin, paprika, salt, and black pepper. Stir well.
Bring to a boil, then reduce heat and let simmer for 30 minutes, stirring occasionally.
Serve hot and enjoy!
