Ingredients

  • 1 cup Pumpkin puree
  • 1.5 cups All-purpose flour
  • 2 tablespoon Sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Nutmeg
  • 1 cup Almond milk
  • 2 tablespoon Vegetable oil
  • 1 teaspoon Vanilla extract

Instructions 

  1. In a mixing bowl, whisk together the pumpkin puree, almond milk, vegetable oil, and vanilla extract.
  2. In another bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, and nutmeg.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  4. Heat a non-stick skillet over medium heat and lightly grease it.
  5. Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with your favorite toppings.
