Ingredients

  • 2 cups fresh spinach chopped
  • 1 cup raw cashews soaked in water for 2 hours
  • 1 cup unsweetened almond milk
  • 2 tablespoons nutritional yeast
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. Preheat your oven to 350°F (175°C).
  2. 2. In a blender, combine soaked cashews, almond milk, nutritional yeast, garlic, lemon juice, salt, and pepper. Blend until smooth.
  3. 3. In a mixing bowl, combine the blended mixture with chopped spinach. Stir well.
  4. 4. Transfer the mixture to an oven-safe dish and bake for 15 minutes, or until bubbly and slightly golden on top.
  5. 5. Serve warm with your favorite chips or veggies.
