Vegan Sweet Potato Chili

- 2 medium Sweet Potatoes peeled and diced
- 1 medium Onion diced
- 3 cloves Garlic minced
- 1 tablespoon Olive Oil
- 2 cups Vegetable Broth
- 1 can Black Beans drained and rinsed
- 1 can Kidney Beans drained and rinsed
- 1 can Diced Tomatoes
- 2 tablespoon Chili Powder
- 1 teaspoon Ground Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
1. Heat olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
2. Add the minced garlic and cook for another minute.
3. Add the diced sweet potatoes, chili powder, cumin, and paprika. Stir to coat the sweet potatoes with the spices.
4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until the sweet potatoes are tender, about 15 minutes.
5. Add the black beans, kidney beans, and diced tomatoes. Simmer for another 10 minutes to let the flavors meld together.
6. Season with salt and black pepper to taste. Serve hot.
