Ingredients

  • 4 tomatillos, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 8 small corn tortillas
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions 

  1. Heat olive oil in a pan over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Add mushrooms, tomatillos, cumin, and paprika. Cook until mushrooms are tender.
  4. Season with salt and pepper.
  5. Warm tortillas in a separate pan.
  6. Fill tortillas with mushroom mixture.
  7. Garnish with fresh cilantro and serve with lime wedges.
