Vegetable Filo Pie

Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 unit Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Mixed Vegetables (carrots, peas, corn)
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 pack Filo Pastry
  • 2 tablespoon Melted Vegan Butter

Instructions 

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a pan over medium heat. Add chopped onion and cook until translucent.
  3. Add minced garlic and cook for another minute.
  4. Add mixed vegetables, dried oregano, salt, and black pepper. Cook for 5-7 minutes until vegetables are tender.
  5. Brush a baking dish with melted vegan butter. Layer 3-4 sheets of filo pastry, brushing each layer with melted butter.
  6. Spread the vegetable mixture evenly over the filo layers.
  7. Top with another 3-4 layers of filo pastry, brushing each layer with melted butter.
  8. Bake in the preheated oven for 30-35 minutes, until golden and crispy.
  9. Let it cool for a few minutes before slicing and serving.
