Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 1 carrot, sliced
  • 1 zucchini, chopped
  • 1 can chickpeas, drained and rinsed
  • 1 cup vegetable broth
  • 1 can diced tomatoes
  • 1 cup dried apricots, chopped
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
  2. Add cumin, cinnamon, turmeric, and ginger. Stir for 1 minute.
  3. Add carrot, zucchini, chickpeas, broth, tomatoes, and apricots. Bring to a boil.
  4. Reduce heat, cover, and simmer for 30 minutes. Season with salt and pepper.
