Main Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground turmeric
- 1 teaspoon ground ginger
- 1 carrot, sliced
- 1 zucchini, chopped
- 1 can chickpeas, drained and rinsed
- 1 cup vegetable broth
- 1 can diced tomatoes
- 1 cup dried apricots, chopped
- to taste salt and pepper
Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
Add cumin, cinnamon, turmeric, and ginger. Stir for 1 minute.
Add carrot, zucchini, chickpeas, broth, tomatoes, and apricots. Bring to a boil.
Reduce heat, cover, and simmer for 30 minutes. Season with salt and pepper.
