Ingredients 

Main Ingredients

  • 1 cup Quinoa rinsed
  • 2 cups Vegetable Broth
  • 1 cup Chopped Bell Peppers
  • 1 cup Chopped Zucchini
  • 1 cup Chopped Tomatoes
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper to taste

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until quinoa is cooked.
  3. In a mixing bowl, combine cooked quinoa, bell peppers, zucchini, tomatoes, garlic powder, onion powder, salt, and black pepper. Mix well.
  4. Transfer the mixture to a baking dish and spread evenly.
  5. Bake in the preheated oven for 30 minutes, or until the top is golden brown.
  6. Let it cool for a few minutes before serving. Enjoy!
